Steward Insignia Guide
The Chief Steward, under authority of the Captain, supervises the steward department and is responsible for the daily needs and comfort of passengers and crew. Chief Stewards are responsible for the care and maintenance of interior living, sleeping and mess spaces. They monitor and keep records of linens, furniture, and cleaning supplies.

The Second, Third and Fourth Stewards work in ship interior spaces under the direction of the Chief Steward. They are assigned tasks such as cleaning, laundry, maintaining sleeping quarters, and food and beverage service. A Merchant Marine Third Steward or Fourth Steward uniform features shoulder board epaulets with a silver crescent moon symbol and one silver bar.
The Chief Cook supervises all kitchen employees, such as the Second Cook and Baker. Chief Cooks work closely with the Chief Steward in the preparation of food menus and the coordination of crew and passenger meal service. They are responsible for ordering food stores and supplies, and the preparation of meals. They supervise cleaning and maintaining kitchen preparation and food storage spaces.
A Merchant Marine Chief Cook uniform features shoulder board epaulets with a silver crescent moon symbol and three or four silver bars. The Captain may also elect to use a silver knife and fork symbol for cooks and kitchen staff instead of a silver crescent moon symbol.
The Second Cook works under the direction of the Chief Cook and supports the preparation of food, and maintaining kitchen safety and cleanliness. The Baker is in charge of making desserts and pastries and works under the direction of the Chief Cook.

The Chief Purser supervises the purser department and is responsible for the proper handling and administration of passenger and cargo manifests. On arrival in port, Chief Pursers coordinate with government customs and immigration officials. They also handle currency exchange and other money related needs of passengers and crew. On larger ships they may be assisted by several Assistant Pursers.
